I don't know where to put this! I am past halfway in the course but life caught up to me and I have been gone like.. over a week probably? How long do we have to take and finish the course before we have to start all over?

There's no time limit, take your time. Some people may never "finish" the course, but just refer back to it when they want to look something up.
